Two of our favorite defenses against this chilly weather (besides those of the fashion variety) is a big cup of tea and a warm bowl of soup. Today, we have a lovely soup not only to warm your bones but with a nice boost of bright color to perk up your afternoon!

To make this soup, we used one of our cherished kitchen tools – the Cuisinart soup blender.  This baby cooks and blends your favorite soups without ever having to use the stove or dirty multiple pots! This handy little appliance motivates us to do some soup experimenting.

But, you definitely do not need the blender to make this dish. So, let’s get back to our harvest soup! Sweet potatoes, carrots, and butternut squash blend together to create that gorgeous orange hue. Whenever we see that beautiful color, we know we’re getting lots of vitamin A, C, and E, plus precious minerals. It warms our bellies and does our bodies good? Well, hey now!

We made our soup sweet with a little kick of spice. It’s really easy to make, even if you don’t have the soup blender.

Harvest Soup Recipe


Ingredients

  • 1 package of butternut squash noodles
  • 1 package of sweet potato noodles
  • 1 package baby carrots
  • 2 heaping tablespoons minced ginger
  • 1 cup water (add more if you do not want as thick of a soup)
  • 2 teaspoons coarse salt
  • 1/3 cup fresh maple syrup (We used Cask Force Bourbon Barrel-Aged Maple Syrup.)
  • 1 ounce aged cheddar cheese (for garnish)
  • Fire Cider Apple Cider Vinegar and Honey Tonic– (to top finished soup)

A few notes, you absolutely do not have to use the pre-cut noodle style veggies. They do cook a lot faster. Feel free to add less or more ginger and maple syrup.

Instructions

  1. Add all ingredients (except cider and cheese) into a pot or the soup blender.
  2. Bring to a boil, and then reduce to medium.
  3. When all of the vegetables are soft (about 15 – 20 minutes), transfer into a blender.
  4. Buzz away, tasting to see if you need more salt.
  5. Once blended, ladle into a pretty soup bowl.
  6. Top with cheddar cheese and cracked pepper.
  7. Drizzle cider vinegar over the top, and if you’re feeling a little crazy, add a few more drops of maple syrup.
  8. Sit back and let the soup do its job!
